Light Scalloped Potatoes
ingredients
6 Smarter Russet Potatoes
3 cups Chicken Broth
3 Garlic Cloves, minced
1/2 cup Parmesan Cheese
1 tbsp. Fresh Thyme
1 tsp. Salt
1 tsp. Pepper
directions
Thinly slice potatoes and layer in a medium casserole dish.
Bring broth, garlic, thyme, salt and pepper to a boil.
Pour over potatoes and top with parmesan cheese.
Bake at 350 degrees F. for about 90 minutes, or until top is brown, broth is absorbed and potatoes are tender.
